When the husband & I decided to move from the suburbs of Houston, TX to a small home nestled on 36 acres off an old dirt road county road just outside of Dayton Texas, homesteading was the furthest thing from our minds. We simply wanted a place for our daughter and son to run free and fresh air to breath. But God had other plans. About a year in, we wanted to become more self-sufficient, but our only experience with food came from the grocery store. Fast forward 9 years. We grow a large garden in zone 9A, that we eat fresh, can, and dehydrate from. We raise chickens and ducks for egg and meat production. I’ve learned to forage for food, cook from scratch, sew, and even learned to make soap and lotions. We now consider ourselves modern homesteaders, and everything we’ve learned so far has been through our own trials. We invite you along to share this journey with us as we continue to learn and grow. A few years back I was visiting my local meat market owned by a sweet couple from Mexico. I ran in to grab enchiladas sauce. Can you fry these now?
I just found your show .. maybe an hour ago .. but you know that germinating in a paper towel is notorious for molding right? A little pinch of cinnamon powder will "generally" stop (or hinder) the mold from growing without messing with the seeds. Just an FYI in case you hadn't heard. 🙋🏼♀️

How to get rid of insects that make my plants suck
Sounds fantastic. I was glad to hear that the squash is not watery like typical zukes. We have tons of Desi squash on our plants in Michigan, and this is the first year we grew them. We grow a lot of Rampicante squash, which is disease and squash-bug resistant. Today, though, will be roasting sliced Desi squash in the oven with garlic and onions.

I just found out the Ruth Stout heavy mulch method a few weeks ago. I got my winter squash and cantaloup transplanted today and mulched with thick layer of hay. Do you cover your plants with mesh cover before they put out flowers to protect the young plants from pests? My winter melons were destroyed by squash bugs and cucumber beetles last year. I only mulched with very thin layer of straw last year. I hope the heavy mulch will protect the melons and squashes from the bugs. I'd love to hear you experience on that. Thank you!

How much water did you start with before you added the jars in?
Uh oh... just came in from manually doing slug patrol/massacre. They keep eating my clover sprouts and hostas. I didnt know rolly pollies also eat the plants... thought they only ate metals in soil, but this makes sense. Always finding them nearby slugs when I'm patrolling the garden at night.

All my peppers for this season are gone. But I can't scatter blue seeds because they all disappear in the hay and the snails still come. They are now going to my greenhouse too, it all looks so sad. 😢😢😢

I'm planting okra in his memory, if it weren't for his videos, I'd not be enjoying fried okra in the winter.❤️❤️ A perennial will also be planted in his memory.

Thank you for this episode! Perfect instructions that I can understand. Not being government approved....well, I'm 63 years old, and have lived through no helmets and pads on bikes, no car seats in vehicles, sat in the back of the open pick up truck on the highway at 65 mph or greater, and all the other things that are now non-govetnment approved. I grew up on home canned foods and homemade clothes. And now that I'm retired, and have time, I'm returning to my roots. We always waterbathed and used the glass with wire lids. But, I'm going to use your method!!!! Thank you again❤❤❤

You explained everything very well🌞 years ago I canned homemade salsa my tomatoes, pears, apples, and preserves. The freezer jam doesn’t count. Ha ha I still have my old canner. It’s not a pressure type.
Were the lids just hand tightened before going into the canner?

I dry can in the oven, I can both green beans and tomatoes that way and think I’ll try potatoes too instead of pressure canning.
Excellent video! Thank you. May I ask how many plants of this variety you had to be getting this size of daily harvest? And can they be diced and frozen for winter consumption while maintaining their taste and texture?
I keep a piece of the thick plastic foam packaging that comes in boxes in a kitchen drawer, it is perfect for bouncing jars in to compact the contents and you aren't beating yourself up doing it.
